Trini Mango Chow

Visiting a BBQ this summer?  Try this dish, loved by all.


It's basically a yummy, spicy, fruit salad made of mango.  We have been known to add in other fruits too like apples.  It's simple to make, delicious and refreshing.  

And everyone requests it when I go to BBQ's. 

Trini Mango Chow
Mangos (as many as you need)
Shado Beni (season to taste)
Lime 
Garlic
Tiny bit of scorpion pepper
(all season to taste)
Chop up ... the finer the better.

And it's not just for BBQ's.  It's loved all year round! Give it a try!

Dad's Famous Ship Soup (Beef Soup) On a cold, damp rainy day , there is nothing better than my Dad's Famous Ship Soup .  Everyone in the family knows this as his speciality and it is one of my favorite memories of him.   Marinate beef neck bones with green seasoning (shado beni, garlic, scallions, ginger), salt and pepper.  Let it marinate for 45 minutes to an hour.  Bring water to a boil, add ginger, garlic and onions and the marinated beef neck bones to it for 45 minutes - hour.  Let it simmer until the beef is tender.  While that is cooking, you can peel and cut carrots into wedges, brown potato and cut them in half (and leave with the skin - and scrub them) and when the beef is tender you add carrots and potatoes and let it cook for about 15 minute.  Then top it off with watercress and add that to the soup and it's ready to eat.   Delish! 

Salt Fish (Bacalao) & Tomatoes

Having a lime?     Share this Trini style of cooking. It’s fish salted – that’s why it can stay out any time of year! Easy to make and tasty to eat…it will be a big hit!     It was one of my Dad’s favorite dishes. He would make it for all of us, his kids, nieces and nephews.   Give it a try! Saltfish with tomatoes (Bacalao) 1 tablespoon of oil 1/2 pound of boneless salt fish (Bacalao) 1/2 pound of tomatoes chopped 4 garlic bod minced black pepper 1 cilantro chopped 1 chive chopped 1 onion chopped or more 1 medium size frying pan  Ginger Top it off with Golden Ray butter Cooking Method  1. Bring two cups of water to boiling point. 2. Place salt fish (bacalao) into water for 15 minutes 3. Brake salt fish into pieces and set aside 4. Heat frying pan with oil 5. Add garlic, onions, chives, cilantro, ginger and tomatoes to cook for 7 minutes 6. Add salt fish (Bacalao) mix and sprinkle black pepper **Served with cassava (yuca)** ...

Simple Salad - start them young

Simple Salad  Start them young! As obesity becomes an increasing problem among children, the importance of having them understand the values of healthy eating and cooking need to start at home.   When they are with me, my kids cook with me, starting with simple and safe tasks working up in a progression that allows their skills to develop and remains safe. Ingredients Red Leaf Lettuce Carrots Cucumber Garlic Lemon Olive Oil Shred Lettuce Shred Carrots Slice Cucumber This is a simple salad, nothing fancy, but easy for my 8 year old to make.   Mix them together Cut lemon in half and squeeze over the salad Add Salt and Pepper to taste, mix with olive oil and you are ready to go!
